Caprese muffins

INGREDIENTS FOR APPROX. 12 CUPCAKES

For the dough

Flour 150g
Eggs 2
Salt 1 teaspoon
baking powder 1 pk.
cream 50ml
Butter, soft 100 g
dried tomatoes in oil (about 10 pieces) 50g
Ball of mozzarella 1
chopped basil 3 tsp
some pepper
some paprika powder

For the filling and topping

cream cheese 300g
Quark 150g
green pesto 3 tbsp
Salt pepper

For decoration

Small cocktail tomatoes 12
Basil leaves 12
Mini mozzarella balls 12

Let's go...

Preheat the oven to 180°C fan. Grease a muffin tin or use a silicone muffin tin.

Dough
Knead all the dough ingredients together. Cut the dried tomatoes and mozzarella into small pieces and add to the dough with the herbs and spices. Then put the dough into the greased muffin tin.

Fill the muffin tin 2/3 full with the dough.

Press the CUCAP® into the middle and bake for 25 minutes. After baking, remove the CUCAP® and allow the muffins to cool slightly.

Filling and topping
Put the cream cheese, quark, pesto and spices in a bowl and mix well. Fill the cream into a piping bag and pipe it into the recess and onto the cupcake.

Decorate
Then decorate with cocktail tomatoes, basil leaves and mini mozzarella balls.
